This here is American-style ‘whiskey’ fresh out the still, before it has touched a cask. Its a showcase of what the grain bill of corn, barley, wheat & rye have to offer.

Not whiskey, not yet
A new make of new world inspiration.
White Dog was the term used for unaged American style ‘whiskey’, i.e. Bourbon, and that is what Unrest is. It is not a whiskey, it hasn’t been in a cask yet, but it’s the same grain bill as a whiskey – its the newly made spirit, hence ‘new make’. Should it spend 3 years chilling out in wood then, yeah, it’d be a whiskey.
But for now its something else.
“Why would I want something that isn’t quite whiskey?"
New make is a bit of an unknown category and some people don’t get it. To us, that’s like saying what’s the point of white rum when dark rum exists. The answer: because it’s still a damn tasty drink in its own right, it’s just a different vibe. Why would not want to taste the spirit before the wood has made its mark? Some say it’s a blank canvas without time in cask but to the contrary – if it’s great whiskey, then the new make should be great too.
White dog is an entirely different category to whiskey
…and therefore is an entirely different drinking experience. We ask you to keep your your mind open and just taste, we don’t think you’ll be disappointed.

KEY INGREDIENTS & METHOD
75% corn, 12% rye, 11% barley, 2% wheat
A high corn grain bill aids the natural sweetness
Fermented on-grain; this allows as much flavour as possible to pass over into our booze. This takes around 2 weeks.
Distilled off-grain, i.e. we separate the grains from our fermented wash before it reaches our still. We distil twice – the first time we take it up to 40% ABV and the second up to exactly 79.9% ABV.
It’s in the water – We emulate the water profile of Kentucky by adding various minerals to give it the same PH, hardness and mineral content of water found in Tennessee.
Heart of hearts – we take a heads, a hearts and a tails cut. Only around half of the batch makes the cut as our hearts and ends up in the bottle; the rest goes back into the pot alongside our next batch which helps us achieve a consistent flavour profile.
Sour mash
We use a Sour Mash process which is similar to nurturing a sourdough culture. We use the naturally acidic enzymes in the barley to ferment then we add some pot ale/backset/dunder – call it what you will, the stuff that’s left in the still after previous distillations; this allows our own cultivated blend of bacteria and yeast to ferment the batch.
This is the same distillation process as for Paradox
- the key difference is Unrest is entirely unaged.
It is a ‘new make’, aka ‘white dog’ – the hearts are simply watered down to drinking strength then we bottle it.
