Adventurous Spirit Makers
From humble beginnings and what was once a less-than-legal hobby became a profession driven by obsession. Moonshiners Institute was born from a fascination with spirit creation, a commitment to making delectable spirits and an eagerness to share how we do it.
In spirits, the options are endless and ever-changing.
It’s the ripple effect; a small change can add a world of complexity, or take it away. The result can be something that tastes completely different. We think that is totally thrilling. And there’s no end to the different combinations; we want to experiment as much as possible and share our best spirit creations with you.
And because we remain curious, there’s some real fun to be had.
We create the spirits we want to make, taste and enjoy, because we think you will enjoy them too. Continually improving and pressing ahead from a place of true passion; we’re spirits enthusiasts running a distillery with everything on the line to have the freedom to make what we want. We work hard but we have fun doing it. The excitement of trying something new, the anticipation and the thrill of achieving something that tastes incredible and then getting to share it with like-minded friends. What could be better?
We believe there are few better things in life than an exceptional dram.
And when you know how it’s made you can really appreciate the subtleties that collectively make up the taste of that spirit. It is our belief that the spirit industry has been cloak and dagger – sadly, most of us don’t really know what we’re actually drinking or how it’s made. So here’s an open invitation to look behind the curtain; we’ll cut the bullshit and be open about how we arrived at the liquid in the bottle so you can really understand what you’re drinking. We won’t just spout about a copper pot and the finest ingredients, we will let you in on it. To those who care as much as we do, we welcome you to share your thoughts, discuss and critique. Let’s inspire each other and push things forward!

Moonshiners Institute’s mission is to make damn good spirits, show you how we did it and have fun in the process.
But nothing we can say will get across what we’re truly about. We think the best way is to taste them for yourself.

Be open and honest about how our spirits made

Not add anything that doesn’t belong there, no flavours, colours or preservatives. Nothing that isn’t achieved through the base ingredients, fermentation, the distillation or the cask

Limit our environmental impact as much as possible; for us this means where possible reducing water and energy use, avoiding plastics, recycling and keeping our products vegan-friendly.
