*Not a word we particularly like, but one whose definition rings true.
We distill on a micro-scale, using a 100 liter still. In the scheme of things this is tiny. No economies of scale here but instead we have precision; we can hone in.
Capturing hearts, in a bottle.
We have a small scale as it is but we also only capture and bottle the very best parts of the batch – the hearts. We’re pretty picky about what makes the cut too, sometimes only around half of what we distill actually makes it into the bottle.
Our ultra small scale is what allows us to experiment
We can play with ingredients and do very limited releases because we work in such small batches. If something doesn’t really work out or land with drinkers it isn’t the end of the world. On to the next.
We do our utmost to source great ingredients.
This means high quality produce that is organic and sourced locally where possible. It also means not adding anything that doesn’t really need to be there. We say no to additives in favour of properly distilled spirit – what you can achieve through craft alone.
Everything we make will not be enjoyed by everyone
You can’t please everyone all the time and we by no means intend to. We give you full product info so you can make up your own damn mind whether it’s one for you or not.
